  1. First, brew your kombucha: If you're brewing your own kombucha, start with a strong, healthy batch. If you're using store-bought, make sure it's unflavored and pasteurized to avoid unwanted flavors or effects on the final product.
  2. Prepare the acai puree: If you're using frozen acai, let it thaw slightly. If it's already in puree form, great! Measure out your desired amount. I usually opt for 1/2 cup for a robust acai flavor, but you can adjust to your liking. Oh! I almost forgot to mention, try to find an unsweetened variety to keep the sugar content in check.
  3. Combine acai and sweetener: In a blender, combine the acai puree with the stevia (or your sweetener of choice). Blend until smooth. This step is crucial for even distribution of the acai flavor throughout the kombucha. It also avoids those clumps. I hate those!
  4. Mix with kombucha: Gently pour the acai mixture into your kombucha. Stir slowly to combine. Avoid stirring too vigorously, as this can cause excessive fizzing. It’s happened to me before, and, trust me, the cleanup is not fun!
  5. Bottle the kombucha: Using a funnel, pour the mixture into glass bottles, leaving about an inch of space at the top. This is important to prevent explosions during the second fermentation (more on that later). Secure the lids tightly. This is super important!
  6. Second fermentation (optional): For extra fizz and flavor, allow the kombucha to undergo a second fermentation at room temperature for 1-3 days. Keep an eye on the bottles, and burp them (open and quickly close the lid) once a day to release excess pressure and prevent explosions. I’ve learned this the hard way. Also, I love watching those bubbles form. It's strangely satisfying.
  7. Refrigerate: Once the second fermentation is complete (or if you skip that step), refrigerate the bottles to slow down the fermentation process. This will also help to enhance the fizzy flavor.
  8. Serve and enjoy: When you're ready to enjoy your acai kombucha, pour it into a glass and marvel at its beautiful color. Sip slowly and savor the unique combination of tangy kombucha and fruity acai. I like to add a few fresh berries for that special kick!
