Place the chopped white chocolate in the top part of the double boiler or microwave-safe bowl. Make sure you have a good thick layer of white chocolate, you dont want to run out midway!
Gradually whisk in the heavy cream, a little at a time, ensuring the chocolate melts completely and smoothly. Avoid using high heat; low and slow is the key to a perfect fondue. You don't want it to seize up. You should be able to stir continuously.
Once the chocolate is completely melted and smooth, stir in the vanilla extract (if using). A little vanilla extract goes a long way, so start with less than you think you need and add more if necessary, taste testing as you go
Keep the fondue warm over very low heat, stirring occasionally, until ready to serve. If using a microwave, stir every 30 seconds to prevent burning and ensure even melting.
