So, story time. I was at a potluck last summer—you know, one of those where everyone brings something and there's always, like, three potato salads? Anyway, I decided to try something different. Inspired by my friend Maya's garden bursting with herbs, I whipped up a batch of this Green Goddess Dip. Honestly? It was gone in minutes. People were practically scraping the bowl! I even had someone ask for the recipe – and you KNOW that's a sign you've got a winner.

What makes this dip so special? It's the freshness. Unlike those bottled dressings you find at the store, this dip is PACKED with fresh herbs, giving it a bright, vibrant flavor that's simply irresistible. We're talking a symphony of flavors dancing on your tongue – a lil' bit tangy, a lil' bit savory, and a whole lotta yum. Plus, it’s unbelievably easy to make. Seriously, if you can operate a blender (or a food processor – either works!), you can nail this recipe. Don't have a blender? That's okay, I'll tell you how to make it without one too!

📖 Instructions

  1. Gather Your Herbs: This is where the magic happens! Roughly chop your fresh herbs. Don't stress about making them perfect; the blender will take care of the rest. We’re looking for about 1 cup total, packed. If you’re missing one, feel free to sub with another – that’s the beauty of cooking! And don't forget to give those herbs a good wash beforehand – nobody wants gritty dip.
  2. Prep the Other Ingredients: Peel and roughly chop the garlic. If you’re sensitive to garlic, start with one clove and taste as you go. Squeeze the juice from one lemon. Nobody wants a seed in their dip, so make sure you catch them all! Measure out your mayonnaise, sour cream (or Greek yogurt for a tangier, healthier twist!), and olive oil.
  3. Blend It Up (the easy part): Throw all the ingredients – herbs, garlic, lemon juice, mayonnaise, sour cream/yogurt, olive oil, and a pinch of salt and pepper – into your blender or food processor. If you like a little heat, toss in a pinch of cayenne pepper or a dash of your favorite hot sauce. You could even throw in some roasted Hatch Green Chiles!
  4. Blend Until Smooth: Pulse the blender a few times to get things started, then blend continuously until the dip is smooth and creamy. This usually takes about 1-2 minutes, depending on your blender. If it seems too thick, add a tablespoon of water or olive oil at a time until it reaches your desired consistency.
  5. Taste and Adjust: This is crucial! Give the dip a taste and adjust the seasonings as needed. Does it need more lemon juice for brightness? A pinch more salt to bring out the flavors? Maybe a little extra garlic for a bolder kick? Don't be afraid to experiment and make it your own.
  6. Chill Out: Transfer the dip to an airtight container and refrigerate for at least 30 minutes. This allows the flavors to meld together and intensifies the overall taste. Trust me, it's worth the wait. Though I get it, sometimes waiting is hard. Can't wait? You can eat it right away, it will still be great.
  7. Serve and Enjoy!: Serve the Green Goddess Dip with a platter of fresh vegetables (cucumber, carrots, bell peppers, broccoli, you name it!), tortilla chips, pita bread, or crackers. It's also amazing as a sauce for grilled chicken, fish, or vegetables. And you know what? My friend Todd said it's great on sandwiches too. Sky's the limit!
  8. No Blender? No Problem!: If you don't have a blender or food processor, you can still make this dip! Finely chop the herbs and garlic as finely as possible. In a bowl, whisk together the mayonnaise, sour cream/yogurt, lemon juice, and olive oil. Stir in the chopped herbs and garlic. Season with salt and pepper to taste. The texture won't be as smooth, but the flavor will still be fantastic! I've made it this way plenty of times when my blender was in storage, and it always got the job done.

📝 Notes

  • For a vegan version, use vegan mayonnaise and yogurt.
  • Add a pinch of cayenne pepper for a little heat.
  • The dip will keep in the refrigerator for up to 3 days.
