These pastry puffs are unbelievably easy to make and are guaranteed to impress your friends and family! They're so versatile, you can make both sweet and savory versions. I've been making them for years, and they've always been a huge hit at all my gatherings. My only regret is that I discovered this recipe too late.

  1. Preheat your oven to 400°F (200°C). Make sure that oven rack is in the middle position, this is key for even baking.
  2. Lightly flour your work surface. Gently roll out the puff pastry to about 1/8 inch thickness. Don't overwork it, or it'll shrink during baking. If you're using store bought pastry you can skip this step.
  3. Use a 2-inch cookie cutter (or a knife) to cut out circles from the pastry. You should get about 12-15 circles, depending on your puff pastry's size.
  4. Place the pastry circles on a baking sheet lined with parchment paper. Leave some space between each puff to allow for expansion during baking.
  5. In a small bowl, whisk together the egg yolk and a teaspoon of water. This egg wash will add shine and color to your puffs. Don't skip this step!
  6. Carefully brush the top of each pastry circle with the egg wash. For extra flavor, add some sprinkles of sugar or cinnamon here.
  7. Bake for 12-15 minutes, or until the puffs are golden brown and puffed up nicely. Keep a close eye on them—oven temperatures can vary!
  8. Remove from the oven and let them cool slightly on the baking sheet before transferring to a wire rack to cool completely. If you are in a rush you can skip this step.
  9. Once completely cool, fill with your favorite sweet or savory filling. I personally love a simple cream cheese and jam filling, but the options are endless!

  • For best results, use a high-quality puff pastry. Don't overcrowd the baking sheet, allowing for space between the puffs to rise. These are wonderful served warm or at room temperature
