This recipe is my go-to for a quick and healthy weeknight dinner. I stumbled upon it while on holiday in Greece and I am honestly addicted, since I have tried to recreate this recipe tons of time and it never disappoints. It's packed with flavor, easy to make, and incredibly satisfying. Plus, it's super versatile – you can easily customize it with your favorite toppings. One of my friends told me she tried it with roasted sweet potatoes. Genius!

  1. First, we'll tackle the falafel. Combine 1 (15-ounce) can of chickpeas, well-drained and rinsed, 1/2 cup of chopped parsley, 1/4 cup of chopped cilantro, 1/4 cup finely chopped red onion, 2 cloves garlic (minced – if you're like me, and hate chopping garlic, pre-minced is fine!), 1 teaspoon ground cumin, 1/2 teaspoon ground coriander, 1/4 teaspoon cayenne pepper (optional, but adds a nice kick!), and 1/4 cup of all-purpose flour in a food processor or blender. Pulse until you have a coarsely ground mixture, you still want some texture!
  2. Next, add 1/4 cup of water and a pinch of salt to the mixture. Pulse again, scraping down the sides as needed, until you have a somewhat sticky paste. It should still hold its shape, but be somewhat soft. Don't over-process; a little texture is a good thing!
  3. Now comes the shaping. Using your hands, roll the mixture into small balls, about 1 inch in diameter. Or if you prefer, make them into patties – your call! Place them on a baking sheet lined with parchment paper. Lightly spray the falafel with cooking oil.
  4. While the falafel is getting ready for its oven adventure, let’s make the amazing lemon-herb dressing. In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons lemon juice, 1 tablespoon chopped fresh parsley, 1 tablespoon chopped fresh mint, 1 clove of garlic (minced, if you're not already over it!), and a pinch of salt and pepper. Taste and adjust seasoning as needed. Is it perfect? It will be.. I promise.
  5. Bake those falafel balls (or patties) in a preheated oven at 400°F (200°C) for about 20-25 minutes, or until they are golden brown and crispy on the outside. Flip them halfway through for even cooking. Don't crowd the baking sheet; work in batches if necessary for optimal crispiness. If they're sticking a little, that's OK, you can gently pry them loose when you flip them.
  6. To assemble your bowl, start with a base of your favorite greens – like lettuce, spinach, or even kale if you're feeling adventurous. Then, add your perfectly baked falafel. Top with some chopped tomatoes, cucumbers, and a generous drizzle of the lemon-herb dressing. I sometimes add some hummus – you know, for extra creaminess and flavor!
