  1. First, prep your chicken. Cut the boneless, skinless chicken breasts into bite-sized pieces. I like to cut them into thin strips—it helps them cook faster and more evenly. Season generously with salt and pepper. Set aside.
  2. Next up, chop your veggies! I used bell peppers, carrots, and broccoli. But really, feel free to get creative here. Think about what you like—what colors would make the dish pop? Aim for about 1/2 inch pieces—that way everything cooks at a similar rate.
  3. Now, the fun part! Heat a tablespoon of oil (I love peanut oil for stir-fries but vegetable oil is just fine) in a wok or large deep frying pan over medium-high heat. Make sure your pan is nice and hot before adding the chicken; this helps it sear nicely and not steam.
  4. Add your chicken to the hot pan. Stir-fry until it's just cooked through but still tender and juicy. This usually takes about 5-7 minutes. Don't overcrowd the pan or it will steam instead of sear. Do this in batches if needed.
  5. Once the chicken is cooked, remove it from the pan and set it aside. Don't worry, it's not done yet. We'll add it back later.
  6. Now for the veggies! Add the carrots first, as they tend to take a little longer to cook. Stir-fry for 2-3 minutes until they just begin to soften.
  7. Add the bell peppers and broccoli. Stir-fry for another 3-4 minutes, until the veggies are tender-crisp. They should still have a little bite to them—you don't want them mushy!
  8. Time to bring it all together. Push the veggies to one side of the pan and add a tablespoon of soy sauce and a tablespoon of honey to the empty space. Stir this to create a little sauce.
  9. Return the chicken to the pan. Toss everything together to coat it evenly with the sauce. Stir in a sprinkle of sesame seeds for extra flavor and crunch (optional).
  10. Serve immediately! I like to serve this over rice, but you can also enjoy it with noodles or even quinoa. Garnish with some chopped green onions, if you're fancy like that. Enjoy!
