  1. First things first, get your mise en place ready. Wash and chop your broccoli into bite-sized florets. Grate your cheese – I prefer a sharp cheddar, but go wild!. Crack your eggs into a bowl and give them a good whisk. Season with salt and pepper to your liking. Don't be shy with the pepper!
  2. Heat a tablespoon of olive oil (or butter, if you're feeling fancy) in a non-stick skillet over medium heat. Once it's shimmering, add your broccoli. Sauté for about 5-7 minutes, or until it's tender-crisp. Don't overcook it, or it'll get mushy. We want some texture here!
  3. Now, gently push the broccoli to one side of the pan. In the empty space, pour in your whisked eggs. Let them cook for a minute or two, then start gently stirring with your spatula, incorporating the broccoli. Keep stirring until the eggs are mostly set but still slightly moist and creamy.
  4. Once the eggs are mostly cooked, sprinkle generously with your cheese. Stir gently until it melts and everything is beautifully combined. If it seems too dry add a tablespoon or two of milk or cream to get it to your desired consistency
  5. Once the cheese is melted and gooey, and the eggs have reached your desired consistency remove it from heat. Serve immediately. Enjoy the cheesy goodness!

📝 Notes

  • For extra flavor, consider adding a pinch of garlic powder or onion powder while sautéing the broccoli.
  • If you like a little spice, add a pinch of red pepper flakes!
