1. In a large mixing bowl, whisk together the sugar and cornstarch until thoroughly combined. This helps prevent lumps later on. Trust me on this one, I learned the hard way!
2. Gradually whisk in the heavy cream, followed by the milk. Make sure the mixture is smooth and there are no clumps of cornstarch. If you see any, whisk vigorously until they’re gone. This step is super important for a creamy texture later on.
3. In a separate bowl, whisk together the eggs and egg yolks until they are slightly thickened and pale in color. This is crucial for a rich ice cream base.
4. Slowly pour a small amount of the cream mixture into the egg mixture, whisking constantly to temper the eggs. Tempering prevents the eggs from scrambling which is really bad news for ice cream!
5. Once the eggs are tempered, gradually pour the remaining cream mixture into the egg mixture, whisking continuously. This is like a little science experiment and gets really satisfying once you get it right!
6. Pour the mixture into a saucepan over medium heat. Cook, stirring constantly, until the mixture thickens and coats the back of a spoon. This usually takes about 5-7 minutes but keep a close eye on it - It can thicken up fast!
7. Remove the saucepan from the heat and stir in the mint extract and chocolate chips. Make sure they’re evenly distributed throughout the mixture. Yum!
8. Pour the mixture through a fine-mesh sieve into a bowl. This helps remove any lumps and ensures a super smooth ice cream texture. Really worth taking your time on this one!
9. Press plastic wrap directly onto the surface of the mixture to prevent a skin from forming. Refrigerate for at least 4 hours, or preferably overnight, to allow the mixture to completely chill. Patience young padawan!
10. Once chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions. This usually takes about 20-30 minutes. Get excited, you’re almost there!
11. Once churned, transfer the ice cream to an airtight container. Freeze for at least 2 hours, or until firm. You can try a little taste test after 2 hours. But be sure to freeze more if it's not to your liking.
12. Once frozen, scoop and serve. Enjoy your amazing homemade Mint Chip Marvel ice cream!
