  1. First thing's first: make sure your bananas are ripe. Like, REALLY ripe. The riper, the sweeter your ice cream will be. Think speckled brown, almost bruised—that's the magic zone. If you accidentally grab bananas that are too green you might end up with a slightly tart, less creamy ice cream. It won't be a disaster, but trust me on this one.
