📖 Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet generously with parchment paper; this is super important for easy removal later. Trust me on this one!
  2. In a medium saucepan over medium heat, combine 1 cup granulated sugar and 1/4 cup water. Stir gently until the sugar dissolves completely. Once dissolved, do not stir the mixture again!
  3. Insert a candy thermometer and bring mixture to 300°F (150°C) without stirring. If you don't have a thermometer, I guess you'll have to wing it! (This is a bit tricky so def get a thermometer)
  4. Once the syrup reaches 300°F, remove from heat and carefully pour it into a large bowl containing 1 cup semi-sweet chocolate chips. Let it sit for a moment.
  5. Using a spatula, gently fold the melted chocolate into the hot syrup until completely combined. This part can be a little tricky as the syrup will want to resist
  6. Stir in 1/2 cup chopped candied pecans (see note below for making your own). This should add a nice little crunchy texture to the bites
  7. Quickly spread the mixture evenly onto the prepared baking sheet, working fast as it starts to cool and set rapidly. Mmm, delicious!
  8. Let it cool completely (at least 30 minutes) before breaking into small, bite-sized pieces. Be gentle! It's very fragile at first!
  9. Once cooled completely, gently break the brittle into small, bite-sized pieces. Store in an airtight container at room temperature or in the freezer for longer storage. And you're set!

📝 Notes

  • For the candied pecans: Toss 1/2 cup pecans with 1/4 cup sugar and 1 tablespoon of water. Spread on a baking sheet and bake at 300°F (150°C) for 10-12 minutes, or until golden brown and candied.
  • Adjust baking time depending on your oven. Mine is a bit old and tends to burn things easily!
  • Feel free to experiment with different types of chocolate or nuts!
