  2. Next, heat up your large pot over medium heat. Add a tablespoon of sesame oil. Once it's hot, add the garlic and ginger, and sauté for about 30 seconds – just until fragrant. Don't burn them, or you’ll ruin your flavor base!
  3. Now, pour in the seafood broth (or chicken broth if you prefer) and bring it to a gentle simmer. Then stir in your kimchi and gochujang. I usually add about 2 tablespoons of gochujang but adjust this to your preferred spice level! Taste as you go. It's super important to taste to get the balance just right. Remember, it's your masterpiece!
  4. Once the broth is simmering nicely, carefully add your shrimp, mussels, and squid (or any seafood you're using). Cook until the seafood is opaque and cooked through. Typically this takes 3-5 minutes depending on how thinly sliced you've gotten it and the type of seafood.
  5. While the seafood is cooking, prepare your udon noodles. Cook them according to package directions until al dente (slightly firm to the bite). Drain well; rinse with cold water to stop the cooking process, and set aside.
  6. Once the seafood is cooked, gently add the cooked udon noodles to the pot. Toss to combine everything perfectly.
