  1. First, let's prep the jackfruit. Open your can of young green jackfruit and drain it very well. You really want to get as much liquid out as possible--trust me on this one! Then, roughly chop the jackfruit into bite-sized pieces. Don't worry about being too precise; we’re going for rustic here!
  2. Next, get your spice game on. In a large bowl, combine 2 tablespoons of chili powder (adjust to your spice preference!), 1 tablespoon of ground cumin, 1 teaspoon of smoked paprika, 1/2 teaspoon of garlic powder, 1/4 teaspoon of onion powder, and a pinch of salt and black pepper. Mix it all up to get a nice even blend. Oh, and I almost forgot-- add a dash of oregano! It adds a wonderful depth of flavor.
  3. Now, add the chopped jackfruit to the bowl with the spice mixture and toss everything together until the jackfruit is evenly coated. It should be completely covered, but don't worry if some pieces are slightly less coated than others. It all tastes delicious in the end!
  4. Heat a large skillet over medium heat. Add 1 tablespoon of olive oil to the skillet. Once the oil is hot, add the seasoned jackfruit and cook for about 8-10 minutes, stirring occasionally, until the jackfruit is tender and slightly browned. If it starts sticking, add a little bit of water or vegetable broth to keep things moving smoothly.
  5. While the jackfruit simmers, warm your tortillas. You can heat them in a dry skillet, microwave, or even directly over a gas flame for a slightly charred, smoky flavor! I personally love that slightly charred flavor; it's just so much more flavorful!
  6. Once the jackfruit is cooked and the tortillas are warm, you're ready to assemble your tacos. Fill each tortilla with the jackfruit mixture and top it with your favorite additions. I like to add some shredded lettuce, diced tomatoes, a dollop of sour cream or vegan alternative, and some fresh cilantro. But the possibilities are endless, so feel free to get creative and have fun with it!
  7. Serve your mouthwatering Jackfruit Tacos with a sprinkle of fresh lime juice and a side of your favorite salsa. Enjoy!
