Spring has sprung, and with it comes an abundance of fresh, vibrant ingredients! This recipe celebrates the bright flavors of spring with a delicious plant-based meatball that's as pretty as it is tasty. One of my friends told me about their fun hiking experience in the mountains, and I thought I'd share something that makes you feel as good as a hike after a long day.

  1. Preheat your oven to 375°F (190°C). This is crucial for getting those perfectly golden-brown meatballs.
  2. In a large bowl, combine the plant-based ground meat, finely chopped onion (about 1/2 cup), and the drained peas. Gently mix it all together. Don't overmix – we want some texture!
  3. In a separate bowl, whisk together the breadcrumbs, egg, nutritional yeast (for that cheesy flavor!), salt and pepper. Mix until it's all combined.
  4. Add the wet ingredients to the dry ingredients. Gently fold everything together until it's just combined. Again, no need to overwork the mixture!
  5. Roll the mixture into approximately 1-inch meatballs. Make sure they are all evenly sized – this ensures even cooking.
  6. Lightly grease a baking sheet. Arrange your meatballs on the baking sheet, leaving a bit of space between each one.
  7. Bake for 20-25 minutes, or until the meatballs are golden brown and cooked through. Flip them halfway through for even browning.
  8. While the meatballs bake, prepare your sauce if using a sauce. I really like a simple tomato-basil sauce – super yummy!
  9. Once the meatballs are baked, let them cool slightly before serving. Serve them with your favorite pasta, rice, or a big salad! You know how much I love a good salad.
  10. Optional: To add extra flavor, you can pan-fry the meatballs for a few minutes before baking for some nice crispy edges. Careful not to burn them!
  11. If your meatballs are sticking to the baking sheet, try using parchment paper or silicone baking mats next time!
