I developed this recipe after a particularly disappointing restaurant experience. The cauliflower was bland and overcooked… it was the culinary equivalent of a rainy Tuesday. Determined to do better, I experimented with different roasting techniques and seasonings, and this recipe is the delicious result. Prepare to be amazed by how much flavor you can pack into a humble cauliflower!

📖 Instructions

  1. Preheat your oven to 400°F (200°C). It's always a good idea to preheat fully, otherwise you end up with uneven cooking and a grumpy chef!
  2. Wash and thoroughly dry a large head of cauliflower. This step is CRUCIAL for crispy steaks—moisture is the enemy of a good sear!
  3. Carefully remove any cauliflower leaves. Using a vegetable peeler, carefully peel off the tough outer leaves and any blemishes. Don't peel too aggressively; you want to maintain some of that outer texture.
  4. Once peeled, using your sharp chef's knife, slice the cauliflower head into 1-inch thick steaks. Aim for even thickness so they cook evenly. There's nothing more frustrating than a unevenly cooked meal!
  5. In a large mixing bowl, whisk together 2 tablespoons of olive oil, 1 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/4 teaspoon of smoked paprika, salt, and pepper to taste. Feel free to get creative with your seasoning!
  6. Place your cauliflower steaks on a baking sheet lined with parchment paper. Lightly brush both sides with the olive oil mixture. Make sure to generously coat each steak for flavor and to avoid sticking.
  7. Roast the cauliflower steaks for 20-25 minutes, flipping them halfway through. Keep a close eye on them to avoid burning. You're looking for a beautiful golden-brown color and a tender inside. The internal temperature should be around 190-200°F (88-93°C).
  8. While the cauliflower roasts, prepare your favorite steakhouse sides like roasted asparagus, creamed spinach, or even some yummy garlic mashed potatoes. Balance the meal, you know?
  9. Once the cauliflower steaks are perfectly cooked, remove them from the oven. Let them rest for a few minutes before serving. This allows the juices to redistribute for a more flavorful and tender experience.
  10. Garnish with fresh herbs, a drizzle of balsamic glaze, or a sprinkle of parmesan cheese before serving. Let that cauliflower shine!

📝 Notes

  • For extra flavor, marinate the cauliflower steaks in the olive oil mixture for at least 30 minutes before roasting. This allows the flavors to fully penetrate and develop.
  • Don't overcrowd the baking sheet! Ensure there's enough space between each steak for even cooking and browning. If you need to, roast them in batches.
  • Feel free to experiment with different herbs and spices to customize the flavor profile to your liking. Think about adding some cayenne pepper for a kick!
