📖 Instructions

  1. First, gather your vegetable scraps! Think onion peels, carrot tops, pepper stems, and even those wilted herbs from your fridge. Wash them thoroughly, and any parts you wouldn’t eat should be discarded..
  2. Roughly chop the scraps into 1-inch pieces. I'm all for rustic chopping; it doesn’t have to be perfect!
  3. In your stockpot, sauté about 1 tbsp of olive oil and a roughly chopped onion (if you have an extra one lying around). Sweat gently until it’s translucent, about 5 minutes. Don’t brown it, just mellow it out.
  4. Add the rest of the vegetable scraps into the pot, followed by about 8 cups of water (or enough to cover the vegetables well) and bring to a boil. Once at a boil, turn the heat down, cover the pot and simmer for at least 30 minutes, or up to an hour for a deeper flavor. The longer the better, really!
  5. Once the broth has simmered, taste it. Adjust seasonings if needed – salt and pepper are your friends here. I usually find I need about a teaspoon of salt but go with your taste.
  6. If you want a super smooth broth, use an immersion blender to blend directly in the pot. If you’re using a regular blender, work in batches being cautious of hot liquids and steam!
  7. Strain the broth through a colander into a large bowl, or another clean pot. Press down on the vegetables in the colander to extract every drop of that goodness. Don’t be shy!
  8. And there you have it! Your glorious, flavorful broth is ready. I love to use mine as a base for soups and stews, or simply enjoy it on its own with a piece of crusty bread.
  9. To make it even more flavorful, store the broth in the fridge overnight, it'll deepen in flavor, that is magic! Then, gently reheat before serving.
