You know, something kinda funny happened to me the other day. I was at the farmer's market, just browsing, when I bumped into an old friend, Sarah. She looked absolutely radiant, glowing from the inside out. I had to ask her what her secret was, and she just smiled and said, 'Root Revival Broth!' Apparently, it's her go-to for a quick and easy nutrient boost. So I'm tryna make this broth, and let me tell you, it's like a hug in a mug. We're talkin' serious health benefits here! This isn’t just any broth; it's a powerhouse of vitamins, minerals, and antioxidants, all thanks to the amazing root vegetables and medicinal herbs that go into it. It's especially amazing after a long day, if I'm being honest. A cup of this stuff and I’m practically ready to run a marathon. Well, maybe not a marathon, but definitely a brisk walk around the block. Give it a go! I hope you will like it.
Root Revival Broth isn't just about feeling good; it's about giving your body what it needs to thrive. The combination of root vegetables like carrots, parsnips, and burdock root provides a wealth of vitamins, minerals, and fiber. Then you add in the medicinal herbs like astragalus root and ginger, which are known for their immune-boosting and anti-inflammatory properties. And honestly, it’s about time someone made food taste good and be healthy. As I navigate life, I can't help but feel like there aren’t enough meals that are good for you.
This recipe is all about flexibility, too. Feel free to experiment with different root vegetables, herbs, and spices to create a broth that suits your taste preferences. Whether you're looking for a comforting winter warmer or a light and refreshing summer elixir, Root Revival Broth can be tailored to your needs. And trust me, once you start making your own broth, you'll never go back to store-bought stuff again. It's just that good. My mom was never one for health foods (she lived off of cheese and crackers). But now she loves it! So if she likes it, it’s probably good. What do you think?

📖 Instructions
Preheat your oven to 400°F (200°C). This ensures the vegetables will roast evenly and develop a rich, caramelized flavor.
Wash and roughly chop all the root vegetables. There's no need to peel them unless they're particularly dirty or have blemishes. Aim for pieces that are roughly the same size to ensure even cooking. Also, give the garlic a rough smash, releasing those flavorful oils.
Spread the chopped vegetables and smashed garlic on a baking sheet lined with parchment paper. Parchment paper makes cleanup a breeze!
Drizzle the vegetables with olive oil and sprinkle with sea salt and black pepper. Toss everything together to coat evenly. Don't be shy with the seasoning – it'll all contribute to the broth's final flavor.
Roast the vegetables for 30-40 minutes, or until they are tender and slightly caramelized. Keep an eye on them to prevent burning.
While the vegetables are roasting, prepare your stockpot. Add the dried shiitake mushrooms, burdock root, astragalus root, ginger slices, and turmeric powder to the pot.
Once the roasted vegetables are ready, transfer them to the stockpot. Add the bay leaves and any other herbs you're using. I like to add a sprig of fresh thyme or rosemary for extra flavor.
Cover the vegetables and herbs with 12 cups of water. Bring the mixture to a boil over high heat, then reduce the heat to low and simmer gently for at least 2 hours, or up to 4 hours for a richer flavor. Keep a close eye on the liquid level and add more water if needed to keep the vegetables submerged.
After simmering, carefully strain the broth through a fine-mesh strainer lined with cheesecloth. This will remove all the solids, leaving you with a clear, flavorful broth. Discard the solids.
Taste the broth and adjust the seasoning as needed. You may want to add more salt, pepper, or herbs to suit your preference. A squeeze of lemon juice can also brighten up the flavor.
Let the broth cool completely before transferring it to airtight containers for storage. It will keep in the refrigerator for up to 5 days or in the freezer for up to 3 months.
📝 Notes
For a richer flavor, roast the root vegetables before simmering.
