One day, I accidentally made way more waffles than I needed and since I don’t like waste, I decided to freeze them. And guess what? They were amazing! Just as tasty as freshly made ones – even better if I'm honest.

  3. Gradually add the wet ingredients to the dry ingredients, whisking gently until just combined. Don't overmix; a few lumps are okay!
  4. Preheat your waffle iron according to the manufacturer's instructions. This step is crucial for perfectly crisped waffles.
  5. Pour 1/2 cup to 3/4 cup of batter onto the preheated waffle iron. The amount will depend on your waffle iron's size and desired thickness.
  6. Cook for 3-5 minutes, or until golden brown and crispy. Check regularly to prevent burning!
  7. Carefully remove the waffle from the waffle iron and let it cool completely on a wire rack. This helps prevent them from getting soggy.
  8. Once the waffles are completely cool, stack them in freezer-safe containers or bags, separating layers with parchment paper to prevent sticking. I've found that parchment paper is absolutely essential!
  9. Freeze for up to 2-3 months. To reheat, simply pop them in the toaster or a warm waffle iron for a minute or two. Or better still microwave for 30 seconds or so

📝 Notes

  • For extra flavor, add a pinch of cinnamon or nutmeg to the batter.
  • If you want extra fluffy waffles, separate the eggs and whisk the whites until stiff peaks form before adding them to the batter. A bit more effort but worth it!
  • Don't overmix the batter. Overmixing will make the waffles tough
