Make the Cheese Sauce: While the macaroni is cooking, melt the butter in a separate saucepan over medium heat. Whisk in the flour and cook for 1-2 minutes to form a roux. This is what's going to thicken our sauce beautifully.
Add the Milk and Cheese: Gradually whisk in the milk until the sauce is smooth. Bring to a simmer, then reduce the heat to low. Stir in the shredded cheese until melted and creamy. Season with salt, pepper, and a pinch of nutmeg. Don't be shy with the cheese!
Combine Macaroni and Cheese Sauce: Drain the macaroni and add it to the cheese sauce. Stir until well combined. Taste and adjust seasonings as needed. This is your chance to get creative - maybe a dash of hot sauce?
