  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. Cook the pasta according to package directions. Drain well and set aside. Important! Don't overcook the pasta; it will continue to cook in the oven.
  3. In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to make a roux. This is the base of our creamy sauce, so don't rush this step!
  4. Gradually whisk in the milk, stirring constantly until the sauce is smooth and thickened. Reduce heat to low.
  5. Stir in the cheeses, salt, pepper, and hot sauce. Stir until everything is melted and smooth. If it gets too thick, add a splash more milk.
  6. Add the cooked pasta to the cheese sauce and stir to combine. Taste and adjust seasoning as needed.
  7. Pour the pasta mixture into the prepared baking dish. Top with the breadcrumbs.
  8. Bake for 20-25 minutes, or until golden brown and bubbly. Keep an eye on it so it doesn't burn.
  9. Let stand for a few minutes before serving. Enjoy!

  • Feel free to adjust the amount of hot sauce to your preference. For an extra crunchy topping, you can toast the breadcrumbs in a pan before adding them to the mac and cheese.
