  1. First, let's cook that pasta! Boil a large pot of salted water. Add 1 pound of elbow macaroni and cook according to package directions until al dente. Drain well; set aside. Don't overcook it, you want it to hold its shape, ok?
  2. While the pasta's cooking, make the cheese sauce. In a large saucepan, melt 1/2 cup of butter over medium heat. Once melted, whisk in 1/2 cup of all-purpose flour. Cook for 1-2 minutes, stirring constantly, to make a roux. This is the base of your amazing cheese sauce. It should be smooth and slightly golden.
  3. Gradually whisk in 3 cups of milk. Keep whisking to avoid lumps forming. Bring to a simmer, stirring constantly. If any lumps do form, don't panic! Keep whisking. They should melt away!
  4. Reduce heat to low. Stir in 2 cups of shredded sharp cheddar cheese, 1 cup of shredded Gruyere cheese (or your fave cheese!), and 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir until the cheese is melted and the sauce is smooth and creamy. YUM!
  5. Preheat your oven to 375°F (190°C).
  6. Pour the cooked macaroni into your 9x13 inch baking dish and add the creamy cheese sauce. Stir gently to combine. Make sure all the pasta is nicely coated, okay?
  7. In a large skillet, cook 4 slices of bacon until crispy. Once crispy, set aside, reserving 1 tablespoon of bacon grease in the pan. This will add flavor!
  8. Fry one egg per serving in the reserved bacon grease in a skillet until cooked to your liking; set aside.
  9. Once the macaroni and cheese is ready, you can bake it for 15-20 minutes, or until golden brown and bubbly. Watch it! Every oven's different!
  10. Top the baked macaroni and cheese with the crispy bacon slices and your perfectly fried egg. Serve immediately and enjoy! Don't forget the extra pepper!
