This isn’t your grandma’s mac and cheese—unless your grandma happened to be a culinary genius from a sun-drenched Greek island! This recipe blends the comfort of classic mac and cheese with the bright, salty tang of feta cheese and the richness of Parmesan. Prepare to be amazed. Seriously, this is going to be good. I'm not even kidding.

I first stumbled upon this recipe during a trip to Greece. I was staying in a small village, and my landlady, a wonderful woman named Yia Yia (that means Grandma in Greek, by the way!), made this for me. It was love at first bite.   1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish; set aside.
  2. In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour until smooth. This is your roux, the base of our creamy sauce. Cook for about 1-2 minutes, stirring constantly, until it’s lightly golden – don’t let it brown too much!
  3. Gradually whisk in the milk, making sure there are no lumps. Bring to a simmer, stirring frequently, and cook until the sauce thickens slightly. This should take about 5-7 minutes. Patience, young Padawan!
  4. Remove from heat and stir in the feta cheese, Parmesan cheese, and salt. Whisk until the cheese is melted and the sauce is smooth and creamy. Mmm, cheesy goodness!
  5. Add the cooked pasta to the cheese sauce and stir to combine. Make sure every strand of pasta is coated in that dreamy sauce!
  6. Pour the pasta mixture into the prepared baking dish. Sprinkle the breadcrumbs evenly over the top.
  7. Bake for 20-25 minutes, or until golden brown and bubbly. Keep an eye on it; ovens can be temperamental!
  8. Let it sit for about 10 minutes before serving. This allows the casserole to set and makes for easier slicing. Trust me on this one!
