I stumbled upon this recipe on a whim, trying to create something quick and fun for my niece's birthday party. To my surprise, it was an absolute hit! Everyone loved the individual size—it was easier to handle, reduced any pizza-related spats, and made it feel a bit more special. Plus, the corn adds a delightful textural pop to the usual pizza fare. Prepare to be amazed!

📖 Instructions

  1. Preheat your oven to 400°F (200°C). This is crucial for a perfectly cooked crust. Don't skip this step!
  2. In a large mixing bowl, combine 1 cup of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Give it a quick whisk to combine. Make sure your ingredients are all room temperature.
  3. In a small bowl, whisk together 1/2 cup of warm water, 1 tablespoon of olive oil, and 1/4 teaspoon of sugar. The water should be warm, not hot, to avoid killing the yeast (if using active dry yeast).
  4. Gradually add the wet ingredients to the dry ingredients, mixing with a whisk or your hands until a shaggy dough forms. Don't overmix; just bring it together. This is much more forgiving than it sounds. Trust me!
  5. Lightly flour a clean surface and knead the dough for 2-3 minutes, until it's smooth and slightly elastic. If it's too sticky, add a tablespoon or two of flour, but don't go overboard. You want a soft dough, not a hard one!
  6. Divide the dough into 4 equal portions. Roll each portion into a roughly 4-inch circle or square, whatever shape floats your boat. You can use a rolling pin if you have one, but your hands totally work, too!
  7. Place the mini pizza crusts onto a baking sheet lined with parchment paper or lightly greased. This prevents sticking and makes clean up a breeze!
  8. Spread a thin layer of your favorite pizza sauce over each mini pizza crust, leaving a small border. Think of it as giving the crust a little moat of protection.
  9. Sprinkle about 1/4 cup of shredded mozzarella cheese onto each mini pizza. Or more! There's no such thing as too much cheese (in my opinion).
  10. Evenly distribute about 1/2 cup of fresh or frozen corn kernels over the cheese. If using frozen, make sure to pat them dry first.
  11. Bake for 12-15 minutes, or until the crusts are golden brown and the cheese is melted and bubbly. Keep an eye on them; ovens can vary, and you want that perfectly golden perfection!
  12. Remove the mini pizzas from the oven and let them cool slightly before slicing and serving. It's tempting to dig right in, but a little patience is rewarded with a less-messy experience and a better tasting pizza! Patience, my friend, patience!

📝 Notes

  • For extra flavor, try adding Italian seasoning or garlic powder to the dough.
  • Feel free to experiment with other toppings like mushrooms, onions, peppers or even shredded chicken.
  • Make sure to fully cook any frozen corn before adding it to your mini pizzas
