These mini pizzas are perfect for a quick weeknight meal or a fun appetizer for a party. They’re incredibly easy to make and completely customizable to your taste. I got inspired to make these after a particularly disastrous attempt at a large pizza that resembled something resembling a melted cheese volcano, not my proudest culinary moment

  1. Preheat your oven to 400°F (200°C). If using a pizza stone, place it in the oven while it preheats. This is crucial for a crispy crust!
  2. In a large bowl, combine 1 cup of all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of sugar. Make a well in the center.
  3. In a small bowl, whisk together 1/2 cup of warm water, 2 teaspoons of active dry yeast, and 1 tablespoon of olive oil. Pour this mixture into the well in the flour.
  4. Slowly stir the wet ingredients into the dry ingredients with a fork, until a shaggy dough forms. Then, use your hands to bring it together into a ball. (Don't worry if it's a little sticky!)
  5. Lightly flour a clean surface and turn the dough out onto it. Knead the dough for about 5-7 minutes, until it becomes smooth and elastic. It should still be slightly sticky but not unmanageable.
  6. Place the dough ball in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap or a damp cloth and let it rise in a warm place for about 1 hour, or until doubled in size. This is seriously important; don't skip it!
  7. Once the dough has risen, punch it down gently. Lightly flour a clean surface and roll out the dough to about 1/4 inch thickness.
  8. Use a cookie cutter or a knife to cut out small circles of dough. Each will be one mini pizza. My friend Sarah says a 3-inch cutter makes perfect mini pizzas
  9. Place the mini pizzas onto the preheated pizza stone or baking sheet. Slightly brush the tops with olive oil.
  10. Spread a thin layer of your favorite pizza sauce onto each mini pizza, leaving a small border for the crust. Sprinkle with mozzarella cheese.
  11. Thinly slice one medium-sized bell pepper and one medium onion. Distribute the veggies evenly over the cheese.
  12. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Keep an eye on them; oven temperatures vary!
  13. Once baked, remove the mini pizzas from the oven and let them cool for a few minutes before serving. Enjoy! (Maybe with a salad? I'm feeling healthy today!)
