  1. Preheat your oven to 400°F (200°C). This is super important for a perfectly crispy crust!
  2. In a large mixing bowl, combine 1 cup of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. Give it a good whisk – don't be shy!
  3. In a smaller bowl, whisk together 1/2 cup of milk (any kind works!), 1 large egg, and 1 tablespoon of olive oil. Make sure it's all nicely combined.
  4. Slowly add the wet ingredients to the dry ingredients, mixing gently with a wooden spoon or spatula until just combined. Don't overmix; a few lumps are okay!
  5. Lightly flour a clean surface and turn the dough out onto it. Knead for a minute or two – just until it comes together. It doesn't need to be perfect at this stage!
  6. Divide the dough into 4 equal portions. Roll each portion into a 4-inch circle using a lightly floured rolling pin.
  7. Lightly grease your 9-inch pizza pan or use parchment paper. Place the dough circles on the pan, leaving a little space between them.
  8. Spread a thin layer of pizza sauce over each mini pizza. You can buy pre-made sauce or make your own. Get creative here!
  9. Evenly distribute the pre-cooked broccoli florets over the sauce. I love using about 1/4 cup per mini pizza.
  10. Sprinkle each mini pizza generously with shredded mozzarella cheese. Add other toppings if desired - I like a few sprinkles of Parmesan Cheese!
  11. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Keep a close eye on them so they don't burn!
  12. Once baked, let the mini pizzas cool slightly before slicing and serving. Enjoy your delicious homemade creations!
