These mini pizzas are super fun to make, and even better to eat! Perfect for parties, quick snacks, or even a fun family activity. My kids absolutely love helping me make them, which makes the whole process even more enjoyable! They're also fantastic for picky eaters because the toppings can be personalized to everyone's tastes. I remember one time, my friend brought these to a potluck, and they were devoured in minutes!

  1. Preheat your oven to 400°F (200°C). Make sure that oven rack is in the center position..This will ensure even baking of the mini pizzas.
  2. In a large mixing bowl, combine 1 cup of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Give it a good whisk to mix everything evenly. This is the base of our mini pizza crusts.
  3. In a separate bowl, whisk together 1/2 cup of warm water, 2 tablespoons of olive oil, and 1 large egg. Add this mixture to the dry ingredients. Gently stir everything together with a fork, slowly combining the wet and dry components. Don't overmix; a few lumps are totally fine.
  4. Once you've got a shaggy dough forming, turn it out onto a lightly floured surface. Use your hands to gently knead the dough for about 2 to 3 minutes, or until it comes together in a cohesive ball. Don’t worry about making it perfect – it’s just a mini pizza, after all!
  5. Divide the dough into 8 equal pieces. On a lightly floured surface, roll each piece out into a small circle, about 4-5 inches in diameter. Don't stress if they aren't perfectly round – rustic is good!
  6. Lightly grease a baking sheet with some olive oil or cooking spray. Transfer the mini pizza crusts onto the baking sheet. Make sure that they're not touching each other.
  7. Spread a thin layer of your favorite tomato sauce or pesto onto each mini pizza base. Leave a small border around the edges for a nice crust.
  8. Sprinkle each mini pizza with shredded mozzarella cheese. How much you use is up to you! This step is highly customizable.
  9. Now, for the fun part: Add your favourite toppings! I used a mixture of fresh herbs, such as chopped parsley, oregano, and basil. But feel free to get creative. Sausage, mushrooms, peppers... the possibilities are endless!
  10. Bake the mini pizzas for 12-15 minutes, or until the crusts are golden brown and the cheese is melted and bubbly. Keep a close eye on them so they don't burn. Every oven is different!
  11. Once they're baked, remove the mini pizzas from the oven and let them cool slightly on the baking sheet. This will allow them to firm up and make it easier to cut and handle.
  12. Using a pizza cutter or a sharp knife, slice each mini pizza into 4 or 6 slices. Transfer them to a serving plate, and enjoy your delightful little herb-infused creations!

📝 Notes

  • For extra flavour, add a pinch of garlic powder or onion powder to the dough.
  • Feel free to experiment with different types of cheese or herbs.
  • If you don’t have fresh herbs, you can use dried herbs instead, but use a smaller amount – about 1 tablespoon total. Dried herbs are often more potent than fresh.
  • Make sure to preheat your oven to the correct temperature! This ensures that the pizzas cook through nicely without burning.
