Once the silk is removed, gently pull the husks back up around the corn. Soak the corn in cold water for at least 30 minutes. This will prevent the husks from burning and help the corn steam inside while on the grill. I nearly forgot to soak mine the other day! Don't be like me.
  2. Make the Chipotle Aioli: In a mixing bowl, combine the mayonnaise, minced chipotle pepper in adobo sauce, adobo sauce, lime juice, minced garlic, smoked paprika, and salt. Whisk until well combined and smooth. Taste and adjust seasonings as needed. I like a little extra lime, personally.
  3. Preheat the Grill: Preheat your grill to medium heat (about 350-400°F or 175-200°C). Make sure the grill grates are clean to prevent sticking.
  4. Grill the Corn: Place the soaked corn on the preheated grill. Grill for about 15-20 minutes, turning occasionally, until the husks are charred and the corn is tender. If the husks start to burn too quickly, you can move the corn to a cooler part of the grill or wrap them loosely in foil.
  5. Cool Slightly: Remove the corn from the grill and let it cool slightly so you can handle it without burning your hands. Pull back the husks (you can remove them completely if you prefer).
  6. Apply the Aioli: Use a pastry brush or spoon to generously brush the chipotle aioli all over the grilled corn. Make sure to get in between the kernels!
  7. Serve: Serve the grilled corn immediately. Garnish with a sprinkle of chopped cilantro or a squeeze of lime juice, if desired. This is the perfect side for a summer BBQ!
