These cozy gingerbread cookies are my absolute favorite holiday treat! They're wonderfully spiced, perfectly chewy, and just melt in your mouth. I remember one Christmas, my family and I spent an entire evening baking these cookies, decorating them with colored icing, and sharing stories. It was one of my favorite memories growing up...that, and getting to eat all the extra icing..oops!

  1. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.
  2. In a large bowl, cream together the brown butter (or regular butter) and granulated sugar until light and fluffy. This is important for tender cookies, so don't rush it!
  3. Beat in the eggs one at a time, then stir in the molasses. The dough will be very soft.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don't overmix; a few lumps are okay.
  5. Cover the bowl and chill the dough in the refrigerator for at least 2 hours, or preferably overnight. Chilling is essential for preventing the cookies from spreading during baking.
  6. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
  7. On a lightly floured surface, roll out the dough to about 1/4-inch thickness. Use your cookie cutters to cut out the shapes. If the dough becomes difficult to handle, chill it for another 15 minutes.
  8. Place the cookies onto the prepared baking sheets, leaving about 1 inch between each cookie.
  9. Bake for 8-10 minutes, or until the edges are firm and the centers are still slightly soft. They will firm up as they cool. If you burn them, well, you know...don't do that!
  10. Remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  11. Once the cookies are cool, dust them with powdered sugar (my fave) or decorate them with icing if you're feeling fancy. Or not; sometimes simple is best!

📝 Notes

  • For extra-gingery flavor, add 1/4 teaspoon of ground ginger.
  • If you don't have brown butter, regular unsalted butter works just fine.
  • Feel free to add other spices, like nutmeg or allspice.
  • Use your favorite cookie cutters for fun shapes!
