  1. First, let’s make the peach syrup. It’s super easy! Roughly chop about 3 ripe peaches (or about 2 cups of chopped peaches). Add them to a small saucepan along with 1/2 cup of water and 1/2 cup of sugar. Bring this to a simmer over medium heat, stirring occasionally. Once the sugar dissolves and the peaches soften (about 10 minutes), use a potato masher to slightly crush the peaches. Then, if you are feeling fancy, use a fine mesh sieve or cheesecloth to strain out any solids. You should have a lovely, syrupy peach concoction. Set this aside to cool. Oops, I forgot to mention...wash your peaches first!
  2. Now for the decadent hot chocolate. In a small saucepan, combine 1 cup of milk (any kind will do – but almond milk is divine!) with 2 ounces of chopped dark chocolate. I love using a good quality dark chocolate for this, but you do you. Heat this over low heat, whisking constantly until the chocolate is completely melted and the mixture is smooth and warm. Don’t let it boil! We don't want to scald the milk, that's not nice at all.
  3. Once your chocolate is melted, it's time for the magic! Stir in about 2 tablespoons of your peach syrup into your hot chocolate. Taste it, feel it, get lost in it! If you want it sweeter, add more syrup to your taste. If you want it less sweet, well then, you’re my hero. Once you’ve reached your hot chocolate nirvana, pour it into your favorite mug. Top it with a dollop of whipped cream or some extra peach slices, if you’re feeling extra fancy. And there you have it! A dreamy glass of peachy hot chocolate, ready to warm your soul.
