  1. First, finely chop your chocolate. The smaller the pieces, the quicker it melts, Remember, the smaller the better!
  2. Next, gently heat the heavy cream in a small saucepan over low heat. Don't let it boil! We just want it warm, not scorching hot.
  3. In a double boiler (or a heatproof bowl set over a pan of simmering water – make sure the bottom of the bowl doesn't touch the water!), combine the chopped chocolate and warm cream. Stir gently with a whisk until the chocolate is completely melted and smooth. This is so important, dont rush it.
  4. Now, stir in the whisky. A little goes a long way, so add it gradually, whisking constantly, until it's evenly incorporated. Make sure you taste test along the way!
  5. Remove the fondue from the heat. If it's too thick, you can add a teaspoon of cream at a time to reach your desired consistency. If it's too thin, just let it sit for a bit, it'll thicken up soon enough.
  6. Transfer the fondue to a serving bowl. Place it over a small, low heat source or a candle warmer to keep it warm and melty, this will stop it from setting.
  7. Arrange your dippers on a platter. Strawberries, marshmallows, and brownie cubes are classic choices, but get creative! Fruit, pound cake and pretzels would all be great too!
