  1. First things first, let's hard-boil those eggs! Place your eggs in a saucepan and cover them with cold water – about an inch above the eggs. Bring the water to a rolling boil over high heat. Once boiling, immediately remove from heat, cover, and let them sit for exactly 12 minutes. This is crucial for perfectly cooked yolks. After 12 minutes, drain the hot water and run cold water over the eggs until they’re completely cool. This stops the cooking process and makes peeling much easier. Gently tap them all over to create cracks and then peel under cold running water; this part is super satisfying. If you have trouble peeling them, try using a spoon to help loosen the shell.
  2. Now for the Sriracha mayo! In a medium mixing bowl, whisk together 1/2 cup of mayonnaise (homemade or store-bought, your choice!), 1 tablespoon of sriracha (or more, depending on your spice preference – start slow!), and a squeeze of lime juice. I like to add a pinch of salt and a little black pepper too. Taste test it and adjust to your liking. Seriously, there’s no such thing as a perfect amount. Your tastebuds are the ultimate authority.
  3. Time to mash those yolks! Once the eggs are peeled, carefully cut them in half lengthwise and gently scoop out the yolks into a separate bowl. You’ll want to leave the whites intact – they’re our egg cups! Using a fork, mash the yolks until they are smooth and creamy. Add a tablespoon or two of the sriracha mayo to the mashed yolks, mixing until everything is well combined. Don't be afraid to go crazy with the mayo; you can always add more later.
  4. Now the fun part! Fill each egg white with the spicy yolk mixture using a spoon or piping bag (if you're feeling fancy). Try to fill them evenly – we don’t want any overflowing or sad little empty egg cups here. If you're feeling extra fancy, add a sprinkle of paprika, chopped chives or fresh cilantro for a pop of color and flavor.
