  1. First, let's get those peppers ready. Grab a large cutting board and slice up 1-2 bell peppers (any color!) into strips. Make 'em nice and thin, so they cook evenly. If you're feeling fancy, deseeded is always good, but hey, it's your life. Do what makes you happy!
  2. Next up, the sausage! Remove the sausage from its casing and crumble it into a large skillet over medium heat. This part might make a little splatter, so maybe wear your favorite apron (or maybe, you know, not your best one?). Cook until it's browned and slightly crispy – about 8-10 minutes. I like to break it up to ensure every bit gets nice and brown.
  3. Add those peppers to the skillet! Toss them in with the sausage. Cook until they're softened and slightly charred around the edges. Give those peppers a good stir every few minutes. This will prevent burning on one side and make sure the peppers cook properly.
  4. Now, let's add some flavor! I love a dash of onion and garlic. Finely chop half an onion and a few cloves of garlic and add them to the skillet with the sausage and peppers. Stir it all together and cook for another 2-3 minutes. This makes a huge difference.
  5. While that's all happening, it's time to boil up some water for your pasta! In a large pot, bring at least 4 quarts of salted water to a rolling boil. Make sure that water is salty enough that it tastes like the sea. Or almost like the sea, at least.
  6. Once the water is boiling, add your pasta and cook according to package directions, making sure it's cooked al dente. Drain the pasta in a colander right after it's cooked to avoid it from sticking.
  7. Finally, combine everything! Add your perfectly cooked pasta to the skillet with the sausage and peppers. Toss it gently to coat the pasta in the delicious sausage and pepper mixture, and, if you want, add a little bit of pasta water for extra sauce!
  8. Taste and adjust seasonings. Add salt, pepper, and maybe even a pinch of red pepper flakes if you like it spicy! Remember, your tastebuds know what they want. Add herbs for a more vibrant taste (rosemary works great). Serve immediately and enjoy!

📝 Notes

  • Feel free to adjust the amount of sausage and vegetables to your liking. If using fresh herbs, add them towards the end of cooking.
  • Make sure the pasta is cooked al dente. Overcooked pasta will ruin the dish’s texture.
  • Leftover pasta can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently on the stovetop. It's always better on day one, but it is usable after that!
