  1. First things first, wash your callaloo leaves thoroughly. Seriously, I mean, really get in there! Sometimes there are little critters hiding! Get them all out! Then roughly chop them. Don't worry about being too precise. We're going for a rustic vibe here. Unless you’re a fancy chef, then you should finely dice those, ok? :D
  2. Next, peel and finely chop your onions, scotch bonnet pepper (remove seeds for less heat!), and garlic. If you're a wimp about peppers, feel free to skip the scotch bonnet. You can always add a pinch of cayenne instead. Trust me, I know my people like some heat.
  3. Heat some oil – about 2 tablespoons – in your large pot over medium heat. Sauté the onions until they’re translucent. Then, throw in that lovely garlic and scotch bonnet (or cayenne) and sauté for another minute or two, until fragrant. Don't burn it, this isn't a bonfire, ok?
  4. Add your chopped callaloo leaves to the pot. Stir to coat them with the onion mixture. Cover the pot and allow the callaloo to wilt slightly - about 5 minutes. You'll know it’s working if they begin to look sad and droopy! This is how you know they are starting to cook!

  6. Once the callaloo is tender, taste it and adjust the seasoning to your preference. Add more salt, pepper, or even a squeeze of lime or lemon juice if you like. Let your taste buds be your guide!
