  1. First things first, get your callaloo ready. Wash the callaloo thoroughly and chop it into bite-sized pieces. Make sure to remove any tough stems. This step's crucial, trust me. I once forgot to remove the stems and it was, let's just say, not a pleasant experience!
  2. Next, prep your veggies. Peel and chop the carrots, potatoes, and onions into roughly similar sizes. Aim for chunks that will cook evenly. If some pieces are too large they might not cook throught! I learned that lesson the hard way after my first attempt! It really makes a difference.
  3. Now for the cooking! Add a little oil to a large pot and saute the onions for a few minutes until they're softened. Don’t burn them! Low and slow is the way to go. This is a key part for good flavour.
  4. Next, add your potatoes and carrots to the pot. Stir them around with the onions and let them cook for about 5 minutes, until they start to soften. It is important that you stir regularly, so that they cook evenly.
  5. Now toss in the callaloo! Stir everything together and let it simmer, covered, for about 10-15 minutes, or until the callaloo is wilted and tender, and the potatoes and carrots are cooked through. If you leave it uncovered for too long, the flavours will disappear!
  6. Once the callaloo and vegetables are tender, taste and season with salt and pepper to your liking. This is where your tastebuds really come into play. Everyones taste is different, so adjust to your liking! If you're feeling adventurous, you could also add a dash of your favorite spices at this point. A little creativity goes a long way!
