  1. First things first, prep your ingredients! Slice the beef thinly against the grain—this is key for tenderness. Wash and chop your bok choy into bite-sized pieces. Mince the garlic and ginger. Don't forget to measure out your soy sauce and other seasonings.
  2. Next, heat your wok or skillet over high heat. Add a tablespoon of oil (sesame oil is delicious, but any neutral oil will do). Once it's hot, add the beef. Stir-fry until it's browned and just cooked through—we're aiming for that tender, juicy texture, not overcooked tough beef. Remove the beef from the wok and set it aside.
  3. Now, add a little more oil to the wok if needed. Stir-fry the garlic and ginger for about 30 seconds until fragrant. Don't burn them, though—they should be nicely fragrant, not blackened. Be careful, it's easy to overcook the ginger and garlic and make them bitter.
