This chicken stir-fry is my go-to weeknight dinner. It's quick, easy, and bursting with fresh flavors. It's also super customizable - feel free to swap out veggies or add your own protein. One time, my friend Mary brought this dish to a potluck, and everyone raved about it. I even had a little bit left over for lunch the next day, and it tasted even better!

I love using a wok for this recipe because it allows for even cooking and helps to keep the vegetables crisp. But a large skillet works just as well. And you'll need a rice cooker, which is a pretty essential cooking tool in my kitchen, but a pot works just as well if you don't have one. Speaking of which, I always use a non-stick pan, it makes cleaning up so much easier after dinner! It helps me relax after a tiring day.

  1. First, get your mise en place ready! Wash and chop all your veggies. I like to cut everything into roughly bite-sized pieces. Don't forget to dice that chicken!
  2. Next, cook the rice according to the package directions. While that's simmering away, let's tackle the star of the show: the chicken. Heat a tablespoon of oil (sesame oil is amazing!) in your wok or skillet over medium-high heat, then add the chicken. Cook until it's browned and completely cooked through, about 5-7 minutes. Remove the chicken and set aside.
  3. Now, add the rest of your veggies to the wok. Stir-fry for about 3-5 minutes, or until they're tender-crisp. I like my veggies with a bit of a crunch, but you can cook them longer if you prefer them softer.
  4. Time to bring it all together! Add the cooked chicken back to the wok along with the soy sauce, honey, and ginger. Toss everything to combine. Cook for another 2-3 minutes to allow the flavors to meld. Season to taste with a bit more soy sauce or honey if needed, maybe a pinch of red pepper flakes for a little kick.
  5. Serve immediately over your fluffy, perfectly cooked rice. Garnish with some sesame seeds or chopped green onions. You might want to sprinkle on some extra ginger for an extra zing! Enjoy!

📝 Notes

  • Feel free to adjust the amount of soy sauce and honey to your liking. A little extra honey is always a good choice! Also you might want to add some sriracha to this, a touch of chili goes so well in stir-fries
  • If you are cooking this for people who don't like veggies, this might not be the best dish for them. It's full of vegetables!
  • Make sure your chicken is fully cooked before serving to avoid getting sick!
