Last night, I had friends over for dinner, and I decided to make this steak and roasted potato recipe. It was a total success; everyone loved it, and cleanup wasn't too bad either! This recipe is easy enough for a weeknight meal yet fancy enough to impress company.

  2. Wash and scrub your Yukon Gold potatoes. I know, it's a little tedious, but trust me, it's worth it. Dry them thoroughly with a clean kitchen towel.
  3. Cut the potatoes into roughly 1-inch cubes. Aim for uniformity – it helps them cook evenly. It's okay if they're not perfect; rustic is in!
  4. In a large bowl, toss the potatoes with 2 tablespoons of olive oil, salt, and pepper. Be generous with the seasoning! Taste as you go, I always do.
  5. Spread the potatoes in a single layer on a baking sheet. Don't overcrowd them. Overcrowding leads to steaming, not roasting. And nobody wants that.
  6. Roast for 30-40 minutes, or until the potatoes are tender and golden brown. Use a fork to check for doneness. They should easily pierce all the way through.
  7. While the potatoes are roasting, it's time to get to work on the steak and the butter. Pat your steak dry with paper towels. This helps create a beautiful sear.
  8. In a small bowl, combine 4 tablespoons of softened butter (I like to use Kerrygold – it's dreamy!), 2 cloves of minced garlic (use a press for maximum efficiency!), 1 tablespoon of chopped fresh parsley, and 1 tablespoon of chopped fresh chives. Mix until well combined.
  9. Season the steak generously with salt and pepper. I like to use coarse sea salt and freshly ground black pepper – it adds so much flavor!
  10. Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil to the skillet. Once the oil shimmers, add the steak. Cook for 3-4 minutes per side for medium-rare. Adjust cooking time depending on your desired doneness. Use a meat thermometer for accuracy.
  11. Once the steak is cooked, remove it from the skillet and let it rest for 5-10 minutes before slicing. This is crucial for tenderness. Seriously, don't skip this step!
  12. Spoon the garlic herb butter over the steak. Mmm, so good. It's almost too good to be true.
  13. Serve the steak immediately with the roasted potatoes. Garnish with extra parsley, if you're feeling fancy. Don't forget a glass of wine to enhance your culinary journey!
