  1. First things first, prep your zucchini! Wash it thoroughly, then slice it into 1/2-inch thick rounds. Don't worry if they're not all perfectly uniform—rustic is in! (unless you are totally into uniform, then just slice it neatly)
  2. Now, let's talk steak. Pat your steak dry with paper towels—this helps achieve that beautiful sear. Season generously with salt and freshly cracked black pepper. A good rule of thumb: don't be shy with the seasoning! Really get in there!
  3. If you're using a marinade, toss the steak in now and let it sit for at least 30 minutes, or even better, a couple of hours. This adds so much flavour and tenderness. The longer the better, really. I sometimes marinate mine overnight in the fridge; its like magic!
  4. Preheat your grill to medium-high heat. Make sure it's clean, or you'll get a weird smoky taste, that's not super desirable. Also, make sure it's oiled, so the steak and zucchini don't stick.
  5. When the grill is hot enough, carefully place the steak on the grill. For a nice crust, don't move it for about 3-4 minutes. Seriously, don't touch it! I know it's tempting but resist!
  6. After that initial sear, flip the steak and cook for another 3-4 minutes for medium-rare. Use a meat thermometer to check the internal temperature if you're unsure. My friend burnt his steak once so i learned from his experience, use a thermometer.
  7. While the steak rests, it's zucchini's turn! Toss the zucchini slices with a little olive oil, salt, and pepper, and grill them for 2-3 minutes per side, or until they're tender-crisp. Again, I do not want to repeat myself but DO NOT overcrowd the grill. Grill in batches!
  8. Once the steak is cooked to your liking, remove it from the grill and let it rest for at least 5 minutes before slicing. This allows the juices to redistribute, resulting in a more tender and flavorful steak. Resting is essential!
  9. Slice the steak against the grain, and serve it with the grilled zucchini. I like to add a squeeze of fresh lemon juice and a sprinkle of herbs like parsley or thyme before serving. That's totally up to you though. Honestly, you can serve it any way you like!

  • For extra flavour, marinate the steak in olive oil, garlic, and herbs for at least 30 minutes before grilling.
  • If you don't have a grill, you can cook this in a grill pan over medium-high heat.
