This recipe is my go-to for a quick, healthy, and absolutely delicious weeknight meal. It's perfect for those evenings when you want something satisfying but don't want to spend hours in the kitchen. Plus, it’s so easy to adapt to whatever fresh vegetables you have on hand – I often swap the green beans for asparagus or broccoli depending on the mood, or what’s on sale at the store!

One of my friends, Sarah, told me that she uses this recipe for picnics in the summer. She loves the way the smoky flavor of the grill blends perfectly with the fresh green beans and crunchy almonds. I mean, who doesn't want to be the hero of the picnic?! That's where the magic happens, right?

📖 Instructions

  1. Preheat your grill or grill pan to medium-high heat. Make sure it's nice and hot before you start cooking – this is key for perfectly seared fish!
  2. Pat the fish fillets dry with paper towels. This helps them sear properly and prevents them from sticking to the grill.
  3. Season the fish fillets generously with salt and pepper. I like to add a little bit of garlic powder and paprika for extra flavor. Don't be shy with the seasoning!
  4. Lightly oil the grill grates or pan to prevent sticking. Use a high-heat oil like canola or avocado oil.
  5. Place the fish fillets on the hot grill or in the grill pan. Cook for 3-4 minutes per side, or until the fish is cooked through and flakes easily with a fork. Remember, overcooked fish is sad fish.
  6. While the fish cooks, prepare the green beans. Trim the ends and toss them with a little olive oil, salt, and pepper.
  7. Add the green beans to the grill or pan during the last 2-3 minutes of the fish's cooking time. Toss them occasionally to ensure even cooking.
  8. In a small bowl, toss the sliced almonds with a tiny bit of olive oil and a pinch of salt. Toast them lightly in a dry pan over medium heat for 1-2 minutes, or until fragrant. Watch carefully, they burn easily!
  9. Once the fish and green beans are cooked, remove them from the grill and let them rest for a minute or two.
  10. Arrange the fish fillets on a plate or platter. Add the grilled green beans alongside, and then sprinkle the toasted almonds generously over the top.
  11. Serve immediately and enjoy! Maybe with a squeeze of lemon, if you're feeling fancy. I really prefer a good glass of crisp white wine myself, though...

📝 Notes

  • Make sure your fish fillets are not too thick, or they may not cook evenly.
  • For extra flavor, you can marinate the fish in lemon juice and herbs before grilling.
  • Don’t overcrowd the grill pan; this will lower the temperature and prevent proper searing. Cook in batches if necessary.
  • If you don’t have a grill pan, you can cook the fish and green beans in a large skillet over medium-high heat.
  • Adjust cooking time depending on the thickness of the fish fillets and your grill’s heat.
  • Have fun experimenting with different herbs and spices to your liking! Get creative!
