  1. Preheat your grill or grill pan to medium-high heat. If using an outdoor grill, make sure it's clean and preheated properly.
  2. While the grill heats up, prepare the cauliflower. Wash the cauliflower and cut into bite-sized florets. Toss them with 2 tablespoons of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
  3. Roast the cauliflower: Place the baking sheet in the preheated oven at 400°F (200°C) and roast for 20-25 minutes, or until tender and slightly browned. Keep an eye on them to prevent burning; every oven is different!
  4. Prepare the fish: Pat the fish fillets dry with paper towels. This helps them to sear nicely. Season both sides generously with salt, pepper, and any other desired herbs or spices.
  5. Grill the fish: Once the grill is hot, carefully place the fish fillets on the grill grates. Grilling time will depend on the thickness of your fillets and the heat of your grill, but generally, 3-5 minutes per side should be sufficient. Use tongs to gently flip them to avoid breaking.
  6. Check for doneness: The fish is cooked through when it flakes easily with a fork. Be careful not to overcook it, or it'll become dry. (My friend burnt his first batch - he totally panicked and then had to order pizza!)
  7. Serve immediately: Remove the fish from the grill and let it rest for a minute or two before serving. Serve the grilled fish fillets alongside the roasted cauliflower. A squeeze of fresh lemon juice adds a lovely zing!
