📖 Instructions
Pat the steak dry with paper towels. This is crucial for a good sear. Trust me on this one, I learned the hard way... once or twice! Season generously with salt and freshly cracked black pepper. Don't be shy!
Heat your grill to medium-high heat. You want a good sear, but not so hot that it burns before it cooks through.
Place the steak on the hot grill. Grill for 4-5 minutes per side for medium-rare, or longer depending on your preferred doneness. Use a meat thermometer to ensure it reaches your desired internal temperature. This might seem unnecessary, but you would be surprised at the number of times a steak has deceived me!
While the steak grills, prepare the figs. Halve or quarter them, depending on their size. Toss them with a drizzle of olive oil, a pinch of salt, and a tiny bit of balsamic glaze. If you don't have balsamic glaze, a splash of balsamic vinegar will do in a pinch!
Grill the figs along with the steak for the last couple of minutes, or until they're slightly softened and caramelized. Don't overcook them; you want them to still have a bit of texture.
In a small saucepan, melt the gorgonzola cheese over low heat with a splash of cream (heavy cream works best, but whole milk will do). Stir until smooth and creamy.
Once the steak is cooked to your liking, remove it from the grill and let it rest for 5-10 minutes, as mentioned before. This is one of the most important steps.
Top the rested steak with the grilled figs and the creamy gorgonzola sauce. Serve immediately and prepare to be amazed... because you will be.
Enjoy every last bite!
📝 Notes
For a less intense gorgonzola flavor, use a milder blue cheese. But, honestly, I think the intense flavor is what makes it!
Don't be afraid to experiment with different types of figs. Some are sweeter than others.
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
If you can't find balsamic glaze, use balsamic vinegar instead!
