Last summer, my friend Dave took me to this amazing seafood shack on the coast of Maine. I'll never forget the grilled swordfish—perfectly seared, buttery, and bursting with fresh herbs. Inspired by that experience, I've developed this recipe. It’s my attempt to recreate the magic, and I think I came pretty close! So get ready to embark on a culinary adventure—you deserve a treat!

  1. Preheat your grill to medium-high heat. Make sure it's nice and clean; no need for extra flare ups. You know, unless you like dramatic grilling!
  2. In a large bowl, combine 1/2 cup (1 stick) of softened unsalted butter, 2 cloves minced garlic (more if you're a garlic fiend like me!), 1 tablespoon of chopped fresh thyme, 1 tablespoon of chopped fresh rosemary, and a pinch of salt and freshly ground black pepper. Whisk everything together until it's smooth and creamy. Oh, so creamy!
  3. Pat the swordfish steaks dry with paper towels. This helps them sear properly. Don't skip this step, trust me I've learned the hard way!
  4. Lightly brush the swordfish steaks with olive oil and season generously with salt and pepper. Because who doesn't like a little extra seasoning?
  5. Place the swordfish steaks on the preheated grill. Cook for 3-4 minutes per side, or until they are cooked through and have nice grill marks. Depending on your grill, you might need to adjust the timing a bit; keep an eye on it and don't be afraid to flip it to make sure its not burning on one side.
  6. During the last minute of cooking, baste the swordfish steaks generously with the garlic herb butter. Let that deliciousness melt all over the fish!
  7. Remove the swordfish steaks from the grill and let them rest for a few minutes before serving. This allows the juices to redistribute, making the fish more tender and flavorful.
  8. Serve immediately and enjoy your delicious grilled swordfish with garlic herb butter. I love to serve mine with grilled vegetables like asparagus, zuchini or bell peppers and a side of lemon wedges! Nom nom!

📝 Notes

  • For best results, use fresh herbs. Dried herbs can also be used, but the flavor will be slightly different. You'll need about 1/3 of the amount of dried herbs.
  • Feel free to adjust the seasoning to your liking. Some like more garlic, some like less. Do what suits your tastes!
