This recipe is my go-to for a cozy autumn evening. It's incredibly simple, surprisingly quick, and tastes amazing. Seriously, it's one of those recipes that always impresses, no matter how many times I make it. I remember the first time I made this soup— I was trying to impress my friend, Sarah. She was blown away. We ended up having a great conversation about fall colors and how amazing pumpkin tastes. It's a fond memory of mine! You can easily adapt this recipe to whatever you have on hand. There's no need for any complicated ingredients here. This recipe is all about the flavor of the pumpkin itself. It's so good I almost forgot to mention it earlier... It really shines through in the simplest way!

This recipe is perfect for busy weeknights because you can prep most of the ingredients ahead of time. I know how easily things can get out of hand when you have a million things to do, so we want to make sure to cut corners whenever possible, right? You can even use canned pumpkin purée to save some extra time. I often have my friends help me when I make this soup - it's always a great way to catch up while doing something productive. We usually just have some good ol' music playing in the background. And don't forget to enjoy the moment while you are creating this masterpiece!

📖 Instructions

  1. First, grab your large pot and place it on the stove over medium heat. Add a tablespoon of olive oil – I love using extra virgin, but any olive oil will work just fine. Let that get nice and warm.
  2. Next, chop up one medium onion. I'm not gonna lie, I often skip this step and just use a pre-chopped one, but chopping it yourself does give it a little something extra. Add it to the pot and sauté for about 5 minutes, or until it's softened and translucent. Don’t let it burn; you know that would be terrible!
  3. Now, it's time for the star of the show – the pumpkin! Peel and cube one small sugar pumpkin (or use 1 15-ounce can of pumpkin purée). Add those sweet pumpkin chunks to your onion, stirring to coat them in that lovely oil.
  4. Add four cups of vegetable broth. Or chicken broth, if you prefer a richer flavor, to the mix along with a teaspoon of salt and half a teaspoon of black pepper. Give it a good stir, ensuring everything is well combined.
  5. Bring it to a boil! Once boiling, reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the pumpkin is completely tender. Now, this is where the magic happens...
  6. Grab your immersion blender (or if you don’t have one, carefully transfer the soup to a regular blender). Blend until smooth and creamy. If you’re using a regular blender, work in batches and vent the lid to prevent splatters – trust me on this!
  7. Taste the soup and adjust seasoning as needed. You might want to add more salt, pepper, or a touch of maple syrup to sweeten it a bit. Everyone has different preferences!
  8. Once you’re happy with the flavor, you’re ready to serve! Pour into bowls and garnish with toasted pumpkin seeds or a swirl of cream. A sprinkle of fresh parsley or chives is also pretty elegant.
  9. That’s it! You just made delicious homemade pumpkin soup. If you're feeling adventurous, try adding a dash of pumpkin spice or some crispy bacon for a savory twist!

📝 Notes

  • For a richer flavor, use chicken broth instead of vegetable broth.
  • Add a dash of maple syrup for extra sweetness.
  • Garnish with toasted pumpkin seeds, a swirl of cream, or fresh herbs like parsley or chives.
