These Champagne-infused shortbread cookies are the perfect treat for any celebration, but especially Valentine's Day! My friend Sarah gave me this recipe ages ago, and it's become a family favorite. The delicate champagne flavor adds a sophisticated touch to these melt-in-your-mouth cookies, making them irresistible. The recipe is surprisingly easy; even a baking novice can master it. Trust me!

I love making these cookies because they're so versatile. You can use different cookie cutters for any occasion. For Christmas, I use star and snowflake shapes; for Easter, I use bunny shapes. This recipe is also a great opportunity to get creative with decorations! I've experimented with drizzling melted chocolate and adding sprinkles. The possibilities are truly endless, and that’s what makes it so exciting for me!

📖 Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper. This prevents sticking and makes cleanup a breeze!
  2. In a large mixing bowl, cream together 1 cup (2 sticks) of softened unsalted butter and 3/4 cup of granulated sugar until light and fluffy. Don't rush this step; it's crucial for achieving that melt-in-your-mouth texture!
  3. In a separate bowl, whisk together 2 1/2 cups of all-purpose flour and 1/2 teaspoon of salt. Gradually add the dry ingredients to the wet ingredients, mixing with a rubber spatula until just combined. Be careful not to overmix!
  4. Gently stir in 1/4 cup of Champagne. Don't worry about being too precise here; a little extra or less won't hurt the outcome much. Just add enough to get the dough to come together!
  5. Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick disk. Wrap it tightly in plastic wrap and chill in the refrigerator for at least 30 minutes. This helps prevent the cookies from spreading too much while baking.
  6. On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Use cookie cutters to cut out your desired shapes. I like using festive heart-shaped cutters around Valentine's Day!
  7. Place the cut-out cookies onto the prepared baking sheet, leaving a little space between each cookie. Bake for 12-15 minutes, or until the edges are lightly golden. They'll firm up as they cool.
  8. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cool, you can dust them with powdered sugar or edible glitter for extra flair. I add a little bit of edible glitter for a touch of magic!

📝 Notes

  • Make sure your butter is nice and soft before you start creaming it with the sugar. It makes all the difference!
  • Don't overmix the dough, or the cookies will be tough. You just want everything to come together nicely.
  • For extra festive flair, dust the finished cookies with powdered sugar or edible glitter!
