This recipe is a celebration of simple, fresh ingredients—the sweet, succulent lobster, and the hearty, flavorful roasted potatoes. It's perfect for a romantic anniversary dinner, a special occasion, or simply a night when you want to treat yourselves to something truly delicious. I was inspired to create this dish after remembering an anniversary dinner at a fancy restaurant that failed to impress; this recipe is my revenge on disappointing restaurants!

The potatoes are roasted to golden perfection, with a crispy exterior and fluffy interior, their earthy flavor enhanced by fresh herbs. The lobster, cooked just right, is tender and juicy, its delicate sweetness perfectly complementing the potatoes. It's a match made in culinary heaven; trust me on this one!

📖 Instructions

  1. Preheat your oven to 400°F (200°C). This is crucial for perfectly crispy potatoes!
  2. Wash and scrub your potatoes thoroughly. Then, cut them into roughly 1-inch pieces. I like to leave the skins on for extra flavor and nutrients; you do you tho!
  3. In a large bowl, toss the potatoes with olive oil, salt, pepper, and your choice of herbs (rosemary and thyme work wonderfully!). Make sure the potatoes are evenly coated. Don't be shy with the seasoning!
  4. Spread the potatoes in a single layer on a large roasting pan. This ensures even cooking and browning. Avoid overcrowding the pan, which might result in steaming instead of roasting.
  5. Roast for 35-40 minutes, or until the potatoes are golden brown and tender. You can toss them halfway through for even cooking. If they start to brown too quickly, reduce oven temperature to 375°F (190°C).
  6. While the potatoes are roasting, prepare the lobster. If you're using live lobster, you'll need to steam it until its flesh is cooked through and opaque. If using pre-cooked, simply defrost it before the final steps. Instructions vary based on your lobster's prep stage, so ensure you check this.
  7. Once the potatoes are cooked, remove them from the oven and set aside. Dont burn yourself!!
  8. Carefully remove the lobster meat from the shell. Cut the meat into bite-sized pieces or leave it whole depending on your preference and the size of your lobster.
  9. Arrange the lobster meat on a plate next to the roasted potatoes. Garnish with fresh parsley (if desired). A squeeze of lemon is nice too!
  10. Serve immediately and enjoy! Pair with a crisp white wine for a truly special meal!

📝 Notes

  • For extra flavor, you can add a clove of minced garlic to the potatoes before roasting.
  • If using frozen lobster tails, be sure to thaw them completely before cooking. You might need to adjust the cooking time if you didn't see this earlier, but don't burn the lobsters!
