It began because my friend, who we shall refer to as 'Steve', visited my place with some beautiful surprise pineapple and we thought, let's create something a bit different for a change.and thus this recipe was created. One of those 'happy accidents'.
These wings are ideal as a game day snack, a simple gathering, or even as a high-class dinner party (yes, we dare say so!). They're that simple, and the absolute best part is that you can have no problem toning down or ratcheting up the heat level to suit your taste. So mild, medium, or totally raging hot, this recipe's got you covered! I tested it out with my family and everyone gave it two thumbs up! Even my finicky eater nephew, the nuggets-only. (Okay, he loved the nuggets but loved the wings too! Small successes!)

Preheat your oven to 400°F (200°C). If you're grilling, get that fired up to medium-high heat.
In a large bowl, whisk together the soy sauce, brown sugar, rice vinegar, sriracha, ginger, garlic powder, chili powder, and black pepper. Give it a good stir until everything is nicely combined. Taste it; does it need any adjustments? (More sriracha? Maybe some honey?)
Add the chicken wings to the bowl and toss to coat them evenly in the marinade. Make sure each wing is getting some lovin'.
Let the wings marinate for at least 30 minutes. The longer, the better—I usually let them hang out in the fridge for a few hours or even overnight for maximum flavor! (Unless you're in a hurry, of course)
Arrange the marinated wings in a single layer on a baking sheet. If grilling, place the wings on the grill.
Bake for 30-40 minutes, flipping halfway through, or until the wings are golden brown and cooked through. If you're grilling, cook for about 20-25 minutes, turning frequently, until nice and crispy. Use tongs to flip those bad boys.
While the wings are cooking, chop up your fresh pineapple. I like using a mandolin for this—it’s so satisfying! (But be careful! Mandolins are sharp!)
Once the wings are cooked, toss them with the chopped pineapple. Don’t be shy, get that pineapple in there!
Serve immediately. Enjoy the sweet and spicy sensation! Garnish with some extra chopped cilantro, if you're feeling fancy.
Optional: Add a sprinkle of sesame seeds for extra crunch and visual appeal. Some people like to add a quick drizzle of honey before serving, just to kick it up another notch!
