Rinse the rice: Place the rice in a fine-mesh sieve and rinse under cold running water until the water runs clear. This removes excess starch and helps the rice cook evenly.
Prepare the sweet potato: Peel the sweet potato and cut it into small, bite-sized cubes (about 1/2 inch). Smaller pieces will cook faster.
Steam the sweet potato: Place the sweet potato cubes in a steamer basket set over a pot of boiling water. Cover and steam for about 8-10 minutes, or until they are tender but still slightly firm. You should be able to pierce them easily with a fork.
Add the rice to a pot: In a medium-sized pot, combine the rinsed rice with water. Bring the mixture to a boil over high heat.
Simmer the rice: Once boiling, reduce the heat to low, cover the pot tightly with a lid, and simmer for 15 minutes. Avoid lifting the lid during this time to ensure even cooking. I repeat DO NOT lift the lid!
Steam the kale: While the rice is simmering, roughly chop the kale and set aside. In the last 5 minutes of the rice cooking time, gently stir the kale into the rice pot. Re-cover the pot and continue simmering. This will steam the kale and keep it a vibrant green.
Combine ingredients: After the 15 minutes of simmering, remove the pot from the heat and let it sit, covered, for 5 minutes. This allows the steam to finish cooking the rice and kale.
Fluff the rice: Gently fluff the rice with a fork to separate the grains. Be careful not to mash the rice.
Combine and serve: Add the steamed sweet potato cubes to the pot with the rice and kale. Gently toss to combine. Season with salt and pepper to taste. You can also add a drizzle of olive oil or a sprinkle of your favorite herbs for extra flavor.
