Place the steamer basket inside the pot. Ensure it's stable and doesn't wobble. Bring the water to a gentle boil over medium heat.
While the water is heating, prepare the flounder fillets. Pat them dry with paper towels. This helps them steam evenly.
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper. This is your flavor bomb!
Place the spinach in the steamer basket. Arrange the flounder fillets on top of the spinach. Make sure the spinach isn't overcrowded, allowing steam to circulate freely.
Pour the olive oil mixture evenly over the flounder fillets. Try to get some on the spinach too for added flavor.
