  3. Now for the curry: Heat coconut oil in a large pot or pan over medium heat. Add the mustard seeds; once they start popping, add the dry red chilies (adjust quantity to your spice preference) and curry leaves. Sizzle these aromatics for about 15 seconds – you want them to release their flavor, not burn.
  4. Next, add the onions and ginger-garlic paste: Sauté until the onions soften and turn translucent, about 5 minutes. I add a pinch of turmeric powder at this stage to enhance the vibrant yellow color of the curry. If your onions start to brown too quickly, lower the heat.
  5. Time for the spices: Add the coriander powder, cumin powder, and chili powder. Stir well and cook for a minute to toast the spices slightly, releasing even more flavor. Be cautious; don't burn the spices. That would ruin the delicate balance of flavors.
