  1. First, rinse the Arborio rice. Give it a good wash under cold running water until the water runs clear. This step helps to remove excess starch and will prevent your rice from becoming too sticky.
  2. Next, get your saucepan ready. Add the water and salt to the saucepan and bring it to a rolling boil over high heat. Now, this is important: The water needs to be a good, vigorous boil before you add the rice. Trust me on this one.
  3. Once the water's boiling, gently add the rice to the saucepan. Stir once or twice to ensure all the grains are submerged and separated, preventing them from sticking together.
  4. Reduce the heat to low, cover the saucepan with a tight-fitting lid, and let the magic happen. Simmer gently for about 15-18 minutes, or until all the water is absorbed and the rice is cooked through but still slightly firm to the bite (al dente). Resist the urge to lift the lid too often, as this will release steam and affect the cooking process.
  5. While the rice is simmering, prepare your herbs and cheese. Finely chop your fresh parsley. Grate the Parmesan cheese. This is a great time to catch up on your favorite podcast, or maybe just gaze out the window and relax. Because honestly, sometimes life gets too hectic!
  6. Once the rice is cooked, remove it from the heat. Let it stand, covered, for a couple of minutes to allow the steam to finish cooking it. This is called 'resting' and it’s essential for perfectly cooked rice.
  7. Now comes the delightful part: Fluff the rice gently with a fork. Don't be too aggressive; you just want to separate the grains. Now, add the chopped parsley and most of the grated Parmesan cheese. Stir gently to combine.
  8. Finally, serve immediately. You can garnish with a little extra Parmesan and a sprig of parsley, if you're feeling fancy. A simple drizzle of olive oil isn't a bad idea either! Now go forth and enjoy your amazing creation!

📝 Notes

  • For extra flavor, try adding a bay leaf while the rice simmers. Remove it before serving.
  • Don't overcook the rice! It should be creamy but still have a slight bite to it.
