It’s simple, but it adds a bright, refreshing pop to any meal. Think of it as the culinary equivalent of a spring breeze on a warm day—that kind of light and zesty.

  2. Next, we’ll combine ingredients: In a medium saucepan, combine the rinsed rice, water, lime juice, and a pinch of salt. Stir gently to ensure everything’s evenly distributed. If you're using a rice cooker, follow the manufacturer's instructions for water-to-rice ratio but still add the lime juice and salt at this stage.
  3. Bring to a boil: Place the saucepan over medium-high heat and bring the mixture to a rolling boil. Once boiling, reduce the heat to low, cover the pan, and simmer for 15-20 minutes, or until all the water is absorbed and the rice is tender. For a rice cooker, simply press the cook button and let the appliance do its magic.
  4. Fluff and finish: Once the rice is cooked, remove it from the heat and let it sit, covered, for 5 minutes. This allows the steam to finish cooking the rice and makes it nice and fluffy. Then, use a fork to gently fluff the rice. Stir in the chopped cilantro and, if using, a little extra lime juice. Taste it and add more salt or lime if needed. Trust your taste buds!
